Raxo



Ingredients

  • 4lbs Pork (Half Loin)
  • 3/4 cup paprika
  • 2 tablespoons minced garlic
  • 1 cup extra virgin olive oil
  • A pinch of ground black pepper
  • Garlic salt to taste
  • Bay leaf for each bag
  • Fries

Instructions

  • Take off fat of pork loin and cube
  • Mix ingredients into a sauce
  • Put pork into sous vide bags (probably 3 of them)
  • Pour sauce equaly into bags with 1 bay leaf
  • Sous Vide for at least 1 hour at 160
  • Pour out sauce into bowl
  • Char up the meat on the griddle
  • Pour sauce back over chared meat
  • Cook fries and place Raxo on top
