Sopapilla Cheesecake



Ingredients

  • 1 ¼ cups granulated sugar
  • 1 teaspoon ground cinnamon
  • (3) 8 ounce packages cream cheese
  • 1 large egg
  • 1 teaspoon vanilla extract
  • (2) 8 ounce tubes of crescent roll sheets
  • 3 tablespoons unsalted butter
  • ¼ cup honey

Instructions

  • Preheat oven to 350 degrees
  • Coat a 9×13-inch baking dish with nonstick cooking spray.
  • In a small bowl, stir together 1/4 cup sugar with the cinnamon
  • In a large bowl with an electric mixer, beat the cream cheese until smooth. Add in the remaining 1 cup of the sugar, the egg, and vanilla.
  • Press one tube of crescent dough into the bottom of pan.
  • Evenly spread the cream cheese mixture on top of the dough
  • Cover with the other roll of crescent dough.
  • Brush the top all over with the melted butter, then sprinkle the cinnamon-sugar mixture all over to cover.
  • Bake for 30-35 minutes or until the crescent dough has puffed and turned golden brown.
  • Remove from oven and drizzle evenly with the honey.
  • Cool for at least 1 hour in the pan.
